Fish fingers

180 g cleaned and deboned haddock

30 ml (2 Tbsp) cake flour

1 egg, beaten

250 ml (1 cup) breadcrumbs

60 ml (1⁄4 cup) cooking oil

Carefully cut the haddock into strips about 2 cm thick.

Place the flour, egg and breadcrumbs into three separate shallow bowls.

Toss the fish strips in the flour until well-coated. Shake off the excess flour, then dip into the egg (do not soak) and coat with the breadcrumbs.

Heat the oil in a frying pan and fry each fish finger for 1–2 minutes until golden. Drain on kitchen towel and serve when cool.
